Slow Cooker Apple Cider Pork

We heard you when you said that slow cooker meals were a lifesaver for a busy weeknight and that you wanted more recipes. Slow cooker meals can also be great for entertaining - as preparing this dish will only pull you away from socializing for about 15 minutes! We like serving over rice or our goat cheese mashed potatoes, and with a side of our shaved Brussels Salad (we omitted the quinoa). A perfect meal for houseguests, dinner guests or for a weeknight meal ready to go when you get back from carpool craziness.

2 lb pork tenderloin or pork loin (if you want to slice and serve make sure to use a pork loin- the tenderloin is delicious but you will have to shred it instead of slice it)

2 teaspoons kosher salt

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon gound ginger

1 teaspoon dried thyme

1 tablespoon avocado oil

1 thinly sliced onion

2 apples, cored and cut into thick wedges, about six slices per apple

1 cup apple cider

1 Tablespoon Dijon

1 Tablespoon apple cider vinegar

1 tablespoon Worcestershire

1 Tablespoon brown sugar (optional-used but think it will make it even better)

1 Tablespoon corn starch

2 Tablespoons unsalted butter, cut into cubes

Press rub into pork. Heat a skillet over medium high heat or set your slow cooker to its sear function. Warm olive oil. Sear pork about 2-3 minutes per side. Remove from pan. Add onion and sauté for 3-5 minutes until soft.

While onion sautés, whisk together cider, Dijon, vinegar, Worcestershire and brown sugar.

Set slow cooker to low. Add onions and apple wedges to the bottom and place pork on top. Pour sauce over pork, place top on slow cooker and cook on low 4 hours.

Remove pork from pot, cover with foil and set aside. Carefully spoon apples out of pan and set aside with pork.

To finish, whisk together 1 Tablespoon cold water and 1 Tablespoon corn starch. Turn sauté function of slow cooker back on or pour into a sauté pan. Whisk mixture into sauce and bring to a boil, then reduce to simmer for 10 minutes. Add 2 Tablespoons butter and whisk while it melts. Add salt if needed (about 1/2 teaspoon).

Spoon sauce over pork and serve with apples.
