Air Fried Coconut Shrimp
We are so sorry, we forgot to take your full order yesterday... you would like a Pina Colada and an order of coconut shrimp. Done. Bonus: these are cooked in the airfryer and are oh-so crisp and light. If you don’t own an air fryer you can pan fry them but, also, get the air fryer! You won’t regret it. These make a lovely snack to have with your cocktail but we will also be topping a salad with them. Thinking greens, diced mango, avocado, picked red onions, coconut shrimp... you get the picture 💫
Air Fried Coconut Shrimp
Adapted from NT Times Cooking
1/2 cup cornstarch
1 Tablespoon lime zest (from 2-3 limes)
1 1/2 teaspoons salt
1/8 teaspoon cayenne pepper
4 large egg whites
1 cup unsweetened coconut, finely diced
1/2 cup Panko
1 lb. large deveined shrimp with tails on (about 25 shrimp)
Salt and Pepper
Canola Oil Spray
For dipping sauce:
1/4 cup mayonnaise
2 Tablespoons Sriracha, or to taste
*Sweet Chili Sauce also makes a great dip
In a shallow bowl combine corn starch, lime zest, salt, cayenne pepper. In a separate bowl whisk the four large egg whites until frothy. In the third bowl combine coconut and Panko breadcrumbs and season with salt and pepper.
Pick up shrimp by the tail and coat in the cornstarch mixture, then the egg white, then the coconut mixture, making sure not to coat the tail.
Place shrimp in air fryer for 10 minutes at 350 degrees. You may have to make it two batches.
