Antipasto Farro Salad

If you invite me to a potluck, this is what I am bringing ๐Ÿ™‹๐Ÿผโ€โ™€๏ธ All of my Italian cheese board favorites are combined with nutty farro and lots of vinegar goodness- itโ€™s SO good and a perfect side for your cookout, and also a great weeknight meal. We canโ€™t stop making it!!

Serves 8
4 cups cooked farro
1 cup very thinly sliced red onions
5 Tablespoons red wine vinegar, divided
1 cup artichokes, quartered or halved depending on size
6 oz Genoa salami, sliced into half moons, and then into strips
1 cup shredded Parmesan
1 cup sliced almonds
1 cup basil leaves, roughly torn
1 cup castelvetrano green olives, torn in half
1/4 cup extra virgin olive oil
Kosher Salt
Fresh Ground Pepper

Toss red onions with 1 tablespoon of red wine vinegar and one teaspoon of kosher salt. Set aside while you prepare everything else.

Toss cooked farro with 2 Tablespoons of red wine vinegar and 1/2 teaspoon kosher salt in a large bowl. Toss in artichokes, salami strips, Parmesan, basil and olives. Toss ingredients. Add olive oil and two more tablespoons of red wine vinegar. Season to taste with salt and pepper.
