Asparagus with Toasted Almonds and Warm Lemon Vinaigrette
We couldn’t let asparagus season pass without giving it some love. This spring side looks good next to anything you pull off the grill, or poach an egg and serve on top for a meatless meal!The whole thing comes together in 10 minutes💫 @mikesorganic
Serves 4 as a side, 2 as a main
1 bunch asparagus
3 tablespoons olive oil
1 shallot, minced
1/2 cup slivered almonds
1 teaspoon kosher salt
1/4 teaspoon red pepper flake
Juice of 1/2 a lemon
1 Tablespoon mint, minced
1/4 cup shaved parmesan
Flaky salt to finish
Steam asparagus for three minutes.
Warm olive oil over medium low heat. Add shallots,slivered almonds, salt and red pepper flake and sauté 3 to 5 minutes until almonds are toasted and shallots are translucent. Add the juice of half of a lemon and let simmer for another two minutes.
Pour vinaigrette over steamed asparagus and sprinkle with mint and parmesan cheese. Top with flaky salt.
