Baked Halibut with Tomatoes and Olives

If you are looking for a nourishing and wildly flavorful dinner, this baked halibut is the perfect dish! Not to mention it has minimal ingredients and easily comes together. This recipe has been on rotation in our house for years and I know once you make it, it will be in your home as well!

Serves 4

Four 6 oz pieces of Halibut, skin removed (you can easily sub in any thick fish filet of choice)
2 cups of cherry tomatoes, halved
1 large shallot, skin removed and thinly sliced
1 garlic clove, peeled
2 teaspoons Italian Seasoning, divided
1/2 teaspoon kosher salt
Fresh ground pepper
1 lemon, zested and thinly sliced
4 oz pitted green olives (about 20 olives- we love using castelvetrano olives)
Olive oil

Preheat the oven to 375 degrees

Slice the garlic clove in half. Rub the inside of a baking dish with the cut side of the garlic. Chop up remaining garlic. Place tomatoes, shallot, remaining garlic, 1 1/2 teaspoons Italian seasoning, 1/4 teaspoon kosher salt, a few grinds of fresh black pepper, lemon zest and 1 Tablespoon of olive oil in the dish and toss.

Pat fish dry with a paper towel. Season fish with kosher salt, fresh black pepper and the remaining 1/2 teaspoon of Italian seasoning. Place fish on top of tomato mixture. Top each piece of fish with 1 lemon slice. Sprinkle olives around the fish. Drizzle a little more olive oil over the top of the dish.
