Beef & Broccoli Stir Fry
This dinner is always gobbled up in our house! Soy sauce seems to have some magical powers around here. Think of this recipe as a template. You can use any meat or vegetable combination that your family likes!
1 1/4 pound of flank or skirt steak
2 Tablespoon avocado oil, divided
1 Tablespoon of cornstarch or arrowroot powder
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1/8 teaspoon baking soda
3 garlic cloves, thinly sliced
3-4 cups of broccoli florets (depending on the meat to veggie ratio you like)
2 Tablespoons low sodium soy sauce
Chicken or Beef Broth (optional)
Cut steak against the grain of the meat into thin bite-size strips.
Combine sliced steak with 1 Tablespoon avocado oil, cornstarch, salt, pepper and baking soda and let it sit for 30 minutes if possible. This will allow the baking soda to tenderize the meat.
Heat 1 tablespoon of avocado oil in a non-stick wok or skillet over medium heat. Brown the beef in batches, cooking 2 to 3 minutes per side. Remove to a platter.
Add broccoli to the pan and sauté for four minutes. If pan is feeling dry, add about 1/4 cup of chicken or beef broth to the pan. Add garlic cloves and sauté an additional minute.
Add the beef and its juices back into the pan. Add soy sauce. Reduce heat and sauté for 2 to 3 additional minutes.
