Name a better way to end an al fresco dinner than an icy cold popsicle. This popsicle gets extra bonus points- it’s a little bit boozy. And delicious! Bonus points when your dessert matches your tablescape 💫

Adapted from Smitten Kitchen

Makes 10 popsicles

3/4 cup fresh lime juice - or the juice of 4-5 large limes or key limes if you can find them!
1 (14 ounce) can sweetened condensed milk
1 cup half and half
1 cup coconut rum, such as Malibu Rum
Pinch of salt
3 cups crushed graham crackers

In a medium bowl or large measuring cup - zest limes until you have 2 teaspoons total. Add lime juice, condensed milk, half and half and salt to bowl and whisk together until combined. Pour into popsicle molds. Freeze for at least 5 hours.

Run molds under warm water for a few seconds to release the popsicles and get them a teeny bit melty. Press each side of popsicle into crushed graham cracker crumbs, coating entirely.

Enjoy!
