Buttermilk Chicken, Two Ways

BUTTERMILK CHICKEN TWO WAYS💫 This week we are focusing on family friendly weeknight meals that are easy to make and can be put in your permanent rotation. We hear you! Kids love chicken drumsticks. Shoot, we all love them. And this buttermilk marinade gives all the flavors and loveliness of fried chicken, but it’s not fried! We love a choose-your-own-adventure recipe, and this one is just that! You can roast these in the oven, cook them in the air fryer (our favorite!) or roll them in breadcrumbs before putting them in the air fryer if your kids need that crunchy texture.

3 pounds of chicken drumsticks (normally about 8-10 pieces) ** you can also use other chicken parts but cooking time will vary
For the marinade:
2 cups of buttermilk
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons smoked paprika
2 teaspoons kosher salt
1 teaspoon black pepper

Put chicken drumsticks in a large ziplock bag. Whisk together marinade ingredients and pour over chicken pieces. Marinade for 4 to 48 hours. Super easy to whip together in the morning in about three minutes!

Here is the choose-your-own-adventure portion:

1. Preheat oven to 425 degrees. Place chicken pieces in a baking pan, sprinkle with flaky salt and bake for 30 minutes.

2. Using an air fryer, place chicken pieces in an air-fryer basket, spray with avocado oil and sprinkle with flakes of salt and cook at 380 degrees for 17 minutes, flipping after the first 10 minutes.

3. Before placing in the air fryer, put 1 cup of breadcrumbs in a shallow bowl and roll each chicken drumstick in the breadcrumbs. Then place chicken pieces in an air-fryer basket, spray with avocado oil and sprinkle with flakes of salt and cook at 380 degrees for 17 minutes, flipping after the first 10 minutes.
