Cake Cookie Ice Cream Sandwich

These make such a fun treat for the 4th! The perfect dessert for kids to help make!

Makes about 15 small ice cream sandwich cookies

1 box of vanilla cake mix
1/3 a cup of avocado oil
2 large eggs
1/4 cup of sprinkles of choice, plus more for rolling the sides
Vanilla Ice Cream

Preheat oven to 350 degrees

Combine the eggs and oil and mix well. Add the cake mix and sprinkles and stir with a wooden spoon or spatula until all ingredients are incorporated.

Using a small cookie scoop, scoop out cookies and place on a parchment lined sheet pan to inches apart. Sprinkle a few additional sprinkles over the top of the cookies.

Bake for 8-10 minutes. Remove from oven and let cool on pan for 10 minutes. Transfer to a cooling rack and once totally cool, flip a cookie over, add a scoop of vanilla ice cream on top, then top with another cookie. Pour sprinkles into a wide, shallow bowl and roll the sides of the cookie in the sprinkles.
