Carrot Curry Dip

Everybody loves a dip! We’re always looking for healthy and delicious dips to add to our repertoire. Have you tried our Beet Dip?? This carrot curry is super flavorful and is really just all about the carrots.

2 cups sliced carrots
1/2 teaspoon curry powder
1/2 teaspoon smoked paprika
1/4 teaspoon cumin
1/8 teaspoon cayenne
1/4 cup olive oil + 2 tablespoons
2 cloves garlic sliced
1 small shallot sliced
3 tablespoons tahini
1.5 teaspoons salt
2 tablespoons lemon juice

Slice carrots into thin rings. Warm 1/4 cup olive oil in pan and sauté carrots, shallots, garlic and spices until carrots are tender. Transfer to a food processor. Add tahini, lemon juice and salt. Pulse. Slowly add in the remaining 2 tablespoons of olive oil and blend until you reach desired consistency.

Sprinkle with sesame seeds and smoked paprika and a drizzle of olive oil. Enjoy with crackers, bread, or veggies!
