Cheese Wafers
These are THE BEST cheese wafers, and coming from two southern ladies, we know a good cheese wafer!
Slice and Bake Cheese Wafers
1 stick unsalted butter, at room temperature
8 oz sharp cheddar, grated
1/4 teaspoon cayenne pepper
1 1/4 cup flour
1/2 teaspoon salt
Combine the butter, cheddar and cayenne in the food processor until smooth. Add flour and salt and run the motor until you form large clumps.
Dump dough onto a large piece of parchment paper and shape into a log about 12” long. Wrap dough up in parchment paper and put in fridge to chill for at least 4 hours.
Preheat oven to 350 degrees
Remove from fridge, unwrap, and slice into 1/4” slices.
Place slices on a parchment lined baking sheet. Bake 18 minutes.
HH Tip- after slicing wafers, place the baking sheet in the freezer for 10 minutes. Once sliced wafers are frozen, place slices in a ziplock bag in the freezer. Remove from freezer whenever you need to put out a cocktail snack, just add two minutes to cook time.
