Chocolate Blossom Cookies
I make a lot of cookies all season long, and these are the most fun cookies to make with your kids! Lots of jobs- unwrapping kisses, rolling the dough in sprinkles, pressing the kisses into the baked cookies. These cookies are fudgy and chewy, the sprinkles give them the perfect crunch, and you can add some variety with the different types of kisses- some mint filled, some marshalllow filled, some regular milk chocolate- oh the joy!
Makes 48 cookies
1 cup unsalted butter, softened
1 1/2 cup sugar
2 egg, at room temparature
1 teaspoon vanillla extract
2 3/4 cup flour
1/4 cup cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup nonpareils
48 chocolate kisses
Preheat oven to 350 degrees
In a large bowl, beat the butter with a hand mixer or in a stand mixer on high for 30 seconds. Add sugar and beat on high for 3 minutes. Beat in eggs, one at a time, until combined, then beat in vanilla.
Add flour, cocoa powder, baking powder and salt to a bowl and whisk together.
Turn mixer down to low and add in flour/cocoa powder mixture and beat until just combined.
Shape dough into 1 inch balls using a small cookie scoop. Roll balls in nonpareils to coat. Place 2 inches apart on a cookie sheet and bake for 10 minutes. Once removed from oven, immediate press chocolate kisses into the cookies center. Let cookies cool on pan for five minutes, then transfer to a wire rack and let cool completely.
