Classic Macaroni Salad
It is safe to say Macaroni Salad is one of my husband’s favorite foods, which sent me on a mission to create a recipe that checks all of the boxes for the perfect macaroni salad - this one is light, yet creamy, tangy and crunchy! Its a classic, and it’s perfect for Summer BBQs!
1 pound elbow macaroni
Kosher Salt
1 cups mayonnaise (@dukes_mayonnaise )
1/2 cup sour cream or greek yogurt
1/3 cup sweet pickle relish
1/4 cup apple cider vinegar
1 Tablespoon Dijon mustard
1 teaspoon celery salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2/3 cup finely chopped red bell pepper
2/3 cup finely chopped carrots
2/3 cup finely chopped celery
2/3 cup finely chopped red onion
Bring a large pot of heavily salted water to a boil and cook macaroni
According to box directions. Drain and rinse with cool water.
Whisk together mayonnaise, sour cream, sweet pickle relish, vinegar, dijon, 1 teaspoon of kosher salt, celery salt, black pepper and garlic powder.
Toss cooked macaroni with dressing. Add chopped red bell peppers, carrots, celery and red onion and toss. Let sit for at least an hour before enjoying to let flavors combine.
