Cookie Cake

There is something about Valentine’s Day that is just hard to resist. Maybe it’s the pink and red combo, the abundance of hearts or the sweet sentiments of love, but we can’t seem to look the other way. And while we are excited for an excuse to create a special evening with our husbands, making special memories with the kids is always the most fun. We got this heart shaped cake pan a few years ago and made and wrapped a cookie cake with M&Ms or pink and red sprinkles for neighbors and teachers to spread some love - one of my favorite things to watch my kids do❣️This cookie cake is SO good you will want to make sure to keep one and spread some self-love 💌

M&M Chocolate Chip Cookie Cake

1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
8 Tablespoons (one stick) unsalted butter, at room temperature
1/2 cup packed dark brown sugar
1/4 cup white sugar
1 large egg
1 teaspoon vanilla extract
1/3 cup chocolate chips
2/3 cup M&Ms

Preheat oven to 375 degrees.

In a medium bowl, whisk together flour, baking soda, and salt.

In a stand mixer, or using a handmixer, mix together butter and sugars on high speed for three minutes until light and fluffy. Add in vanilla and egg and whisk until smooth.

Add flour mixture to butter mixture and use a rubber spatula to stir until just combined and no dry flour is visible. Add chocolate chips and 1/3 cup of M&Ms and fold in.

Scrape cookie dough into a greased pan and spread into an even layer covering the bottom of the pan. You can wet your fingers or wet your spatula to help press it down evenly. Add the remaining 1/3 cup of M&Ms to the top of the cookie and press down.

Bake until golden brown and edges are set, 19 to 21 minutes.

Let cookie sit in pan for 30 minutes before removing. Run a butter knife around the inside edges of the pan to loosen the cookie from the pan. Using a thin spatula remove the cookie from the pan.
