Cornbread

In five minutes you can whip this together to go with your chili, and voila, you have a whole meal. You can throw in a handful of grated cheddar and some minced jalapeños if you are feeling fancy, or some frozen or fresh corn if you want some texture- it’s good all the ways 💫

1 cup flour
1 cup yellow cornmeal
1/3 cup of sugar (1/2 cup if you like sweeter cornbread)
1 teaspoon salt
1 Tablespoon baking powder
1/3 cup melted butter, cooled slightly
1 egg
1 cup whole milk

Preheat oven to 400°

Grease a 9 inch cast iron skillet with butter.

In a bowl, combine flour, cornmeal, sugar salt and baking powder. Whisk together.

In a separate bowl mix together melted butter, milk and egg.

Whisk the wet ingredients into the dry ingredients until just combined.

Pour the batter into the skillet and bake for 20 minutes until the top is golden brown and a toothpick comes out clean.

Serve hot with butter and honey 💫
