Fig & Bacon Fontina Fondue
We LOVE our fondue pot and we felt it added a festive touch to our Galentine’s party! Who doesn’t love warm bubbly cheese?? Especially in chilly February! The bacon and fig jam combo was perfection. You’ve got to try this! Don’t have a fondue pot? Use a cast iron skillet!
1 pound sliced fontina, rind removed
2 garlic cloves, minced
1 tablespoon chopped rosemary
1 tablespoon olive oil
4 slices of cooked bacon, chopped
1/3 cup TJ fig butter (if you don’t have a Trader Joe’s you can use any fig jam)
Toasted baguette for serving
Preheat broiler to high.
Combine bacon and fig jam and set aside.
Place fontina in a 8 inch cast iron skillet or oven safe fondue pot. Sprinkle with garlic and rosemary and drizzle with olive oil. Broil 5 minutes until very bubbly, checking it often.
Dollop fig bacon mixture on top of melty cheese and broil an additional minute.
Remove from broiler and serve immediately with sliced toasted baguette.
