Originally made with Cognac in the early 1920’s, this is one of the most elegant Champagne cocktails, still. After first appearing in the Savoy Cocktail book in 1930, this cocktail took fire! Champagne or sparkling wine are a given in any New Year’s Eve celebration. But why not jazz it up this holiday, with something that feels a bit more extraordinary.

1 ounce cognac, we used Remy Martìn

.5 oz lemon juice
.5 oz simple syrup
3 ounces Champagne, and use the good stuff

Pour the cognac, lemon juice, and simple syrup into a shaker filled with ice.
Shake and strain into a Champagne flute rimmed with lemon. Top with Champagne. Garnish with a lemon twist.

if you want to batch these out combine equal parts simply syrup and lemon juice in a. Small pitcher or glass bottle along side the Cognac and Champagne.
