Granola Balls
Raise your hand if you like packing lunches…. Yep, that’s what we thought. You have probably made some version of these at some point. They are pretty versatile little protein balls, and we swapped out the peanut butter for sun butter in order to make them suitable for school snacks and lunches. If you are looking for a baking activity this weekend, give them a whirl, throw some in the freezer- you will thank us Monday morning.
1 cup gluten free old-fashioned oats
2/3 cup chopped shredded coconut (sweetened or unsweetened)
1/2 cup creamy sun butter or chocolate sun butter or a mix of both!
1/2 cup ground flaxseed
1/2 cup semisweet chocolate chips
3 tablespoons honey
1 tablespoon maple syrup
1 tablespoon chia seeds
2 teaspoon vanilla extract
1/4 teaspoon salt
Combine all ingredients in a large bowl. Let mixture chill in fridge for an hour. Roll into 1 inch balls. Enjoy! Pack in lunchboxes! Send in for snack!
Refrigerate in a sealed container or large ziploc for up to one week or in freezer for up to two months.
