Grilled Brie and Peaches
We are bringing in a little 🔥🔥and kicking off a week of grilling recipes just in time for the last month of summer (How?!😫). People don’t normally think about grilling appetizers, but this app is a summer translation of the 90s baked Brie fad, and to make it even better we topped it with some grilled peaches. It’s a ooey gooey salty sweet creamy peaches and cheesey dream 💫
1 wheel of Brie cheese
2 firm to the touch peaches (you want them to be slightly ripe, but not too ripe), cut in half, pits removed
1 Tablespoon honey
5 basil leaves, thinly sliced
Balsamic glaze
Flakey salt
Fresh ground pepper
I baguette, cut into 1/2 inch slices
Olive oil for brushing
Turn the grill on medium heat and it fully heat. Brush both sides of the Brie wheel and the cut side of the peaches with olive oil. Turn one side of the grill completely off, leaving the other side on. Place Brie wheel over indirect heat, on the side of the grill that is turned off. Place the peaches over the direct heat and grill for 5-6 minutes. Grill the Brie for three minutes a side, for a total of six minutes. Remove Brie and peaches from the grill with a large grill spatula. Place the peaches on a cutting board and dice them. Pour honey over the peaches and toss. Mound peaches on top of the grilled Brie and top with basil, flaky salt, fresh ground pepper and a drizzle of balsamic glaze. Serve with sliced baguette
