Leftover Candy Cookies
Too much candy on hand? Make a batch of these, throw the rolled out cookie dough in the freezer and bake them off in the future! You can use any chocolate candy, and the variety makes every bite more fun than the last! So good!
Makes 3 dozen
2 sticks unsalted butter, at room temperature
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 cups chopped leftover candy
A few M&Ms or Reece’s Pieces for the top
Preheat oven to 375.
Using a hand or stand mixer, cream together the butter and sugar on high for 3-5 minutes. Add eggs one at a time, then vanilla, and mix until combined. Slowly add flour, baking soda and salt on low until combined. Fold in chopped candy with a spatula.
Using a medium cookie scoop, or two spoons, scoop cookie dough into 1.5 inch balls on a parchment lined baking sheet. Place a few chocolate candies on top.
Place cookie trays in the freezer for about 30 minutes. Transfer cookie dough balls from trays to freezer bags.
When ready to enjoy place cookie dough balls back on a parchment lined baking sheet. Cook for 8-10 minutes (you may need to add a few minutes if cooking from frozen). Remove to a cooling rack.
