Blue Cheese & Pear Crostini

BLUE CHEESE & PEAR CROSTINI 💫 A few years ago a woman I was volunteering with was telling me about a blue cheese appetizer she was making for Thanksgiving, and how you could make them in advance and freeze them. This concept lived rent free in my brain for awhile, and this fall I decided to test out some versions. These are so tasty and perfect for the holidays, and we LOVE how you can make them in advance!

Serves 6

12 baguette slices (slice them on the diagonal for larger slices)

1 cup of Gorgonzola (or any blue cheese you choose)

4 Tablespoons of unsalted butter, softened to room temperature

2 pears, quartered, cores removed and cut into thin slices

Honey to drizzle- you can use hot honey, truffle honey, or regular

2 teaspoons fresh thyme leaves, for garnish

Combine your room temperature butter and crumbled cheese.  Spread about 1 Tablespoon on each piece of bread. If you want to prepare these in advance, you can lay out bread topped with the blue cheese mixture on a baking sheet and pop in the freezer for about thirty minutes. Once hardened, you can transfer them to a freezer bag and store them up to a month.

When ready to serve:

Preheat oven to 425 degrees.

Place crostinis on a baking sheet and cook 3 minutes (add an additional three minutes if cooking from frozen).

Remove from oven and top each crostini with a slice or two of pear, a drizzle of honey and a sprinkling of thyme leaves.
