Mustard & Maple Chicken

A friend sent this recipe to me a while ago and it has been in rotation at our house ever since! Because you basically already have these ingredients on hand. Don’t know what to make for dinner? Make this. Too tired too cook? Make this. Lacking inspiration? Make this. It’s simple. It’s surprisingly delicious. And it only takes 30 minutes!

Serves 2


½ cup Dijon mustard

¼ cup pure maple syrup

1 tablespoon rice wine vinegar

¼ teaspoon salt

¼ teaspoon ground black pepper

2 boneless, skinless chicken breasts
1/2 cup crushed pistachios

Preheat oven to 450 degrees Fahrenheit. Line an 8x8" oven-proof pan with 2 layers of tin foil. In small bowl, whisk together Dijon mustard, maple syrup, rice wine vinegar, salt and pepper. Place the chicken breasts in the foil and pour the mixture on top of it. Turn the chicken around in the sauce to make sure it’s completely coated. Bake, uncovered, for 40 minutes. Remove from oven and let sit for 5 minutes. Serve over a salad, rice, quinoa, whatever! Make sure to drizzle the sauce from the pan over the chicken. I like to sprinkle crushed pistachios on top for a little crunch 💫
