Pesto Turkey Meatballs
PESTO TURKEY MEATBALLS 💫 Three ingredients and less than 20 minutes start to finish. How does that sound? These meatballs are SO flavorful and all the flavor comes from one of our favorite ingredients - pesto. We think homemade is best, and we try to keep it on hand (and an extra stash in our freezer). BUT, you can absolutely buy store bought pesto, just please please buy the version from the fridge section, and not the jarred ones in the pasta aisle. The flavors are completely different. My kids gobble these up! You can serve them with roasted veggies, dipped in marinara, or smothered in sauce over pasta. Or maybe in a meatball sandwich.. YUM 💫
1 lb. ground dark meat turkey (94% lean)
3/4 cup pesto
1/2 cup panko breadcrumbs
1 teaspoon kosher salt
1/2 teaspoon black pepper
Preheat the oven to to 425 degrees.
Combine all ingredient in a large bowl and use a spatula to mix them together until completely combined. Use a medium cookie scoop to scoop the meatballs onto a baking sheet. Then, using wet hands, roll them in your palms until they create smooth balls.
Bake for 12 minutes or until internal temperature register 165 degrees.
