Pimento Cheese & Heirloom Tomato Tart

If you are new around here, we should probably let you in on the fact we have the best pimiento cheese recipe out there 😉. It is by far our most requested dip and as two southern girls living in New England, we felt it was imperative to share our love of pimiento cheese with our northern word! This is such a chic appetizer. Or served along side a simple green salad, it is the perfect summer lunch or dinner.

1 sheet frozen puff pastry, thawed according to package instructions
1 to 1.5 cups jazzy spicy pimiento cheese (recipe below) at room temparature
3-4 heirloom tomatoes of various colors, shapes and sizes
Sprinkle of micro greens (we used arugula from @highridgehydro)
Flaky sea salt

Preheat oven to 400 degrees. On a floured surface, gently roll out puff pastry sheet. We used a rectangular one but if you use a square shaped sheet, that is fine, too. Place the pastry on a baking sheet lined with parchment paper.

Using a sharp knife, lightly score dough to form a 1-inch border. Using a fork, prick dough inside the border every 1/2 inch. Bake until golden, rotating pan once, about 15 to 17 minutes.

While the puff pastry bakes, cut tomatoes into 1/4-inch slices and lay on paper towels to drain out excess moisture. Lightly salt the tomatoes with flaky salt.

Once the puff pastry is out of the oven, use a fork to gently press down the inner rectangle of puff pastry. This will make spreading the pimiento cheese much easier!

While the tart is still warm, spread pimiento cheese into the rectangle in a very thin layer. This is easier if the pimiento cheese is at room temp, or even warmed for a few seconds in the microwave.

Layer tomatoes on top. Sprinkle with micro greens. Cut into squares and serve!

Our pimento cheese recipe:

8 oz shredded white cheddar (do not use pre shredded cheese!)
4 oz shredded yellow cheddar
4 oz pimentos-slightly drained and finely chopped
1/3 cup mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp cayenne pepper
1/4 tsp Tabasco
1/4 tsp Cholula hot sauce
3 tbsp chopped chives

Combine all ingredients together in a bowl and stir until combined.
