Prosciutto-Wrapped Endive Salad Bites


Need another holiday appetizer idea? These little bites have all the flavors of a French endive salad, but all wrapped up (literally) in a cute bite. Who hasn’t dreamed of a bite-size salad bite? These would be a great Thanksgiving app to put out, and a beautiful addition to your holiday buffet.

1/2 cup crumbled blue cheese
2 Tablespoons of half and half
1 large bunch of endive, cleaned
1 green apple, small diced
16 whole pecans
16 slices of thinly sliced prosciutto
Balsamic Glaze

Cut the bottom off the endive and separate the leaves.

Mash together the blue cheese and half and half to make a thick paste.

To assemble, spoon about 1/2 tablespoon of blue cheese mixture into the bottom of the endive leaf. Top with 1/2 tablespoon of diced apples and a pecan half. Wrap all of the filling with a piece of prosciutto.

Repeat until all endive leaves are filled. Place on a platter and drizzle the prosciutto part with the balsamic glaze.
