Roasted Strawberries and Burrata Toast

Every season we like to have a toast recipe that celebrates the season. Serve it with a Southside Fizz and it will be the perfect start to a guaranteed fabulous night 💫

2 pounds strawberries, stems removed
1 Tablespoon butter, melted
1 Tablespoon sugar
1 12” baguette
Olive Oil
1 pound burrata (we like the pack that has three smaller balls versus one large ball for this recipe)
1 Tablespoon basil, julienned
Balsamic Vinager or Balsalmic Glaze
Flaky Sea Salt
Fresh cracked black pepper

Preheat oven to 400°. Place strawberries on a parchment lined baking sheet and brush them with melted butter and sprinkle with the sugar. Toss to combine. Place in the oven and roast for 15 minutes.

Once strawberries are out of the oven, sliced baguette in half lengthwise, brush them with olive oil and place them in the oven to get toasty for about 5 to 10 minutes depending on how toasted you like it.

Arrange bread on a platter and cut burrata in half and lay across the bread, then top with roasted strawberries, basil, flaky salt, fresh black pepper, and a drizzle of balsamic. Cut into pieces and serve.

*This recipe yields twice as many strawberries as you need, but save the extras to top ice cream, yogurt, pancakes or poundcake. If you do not want to have any extras half the strawberries, butter and sugar in the recipe.
