Salmon with Peppers

This dish couldn’t be easier to put together, but it feels so elegant and special. It easily fits into your weeknight rotation, but could also be served to dinner guests- the silver bullet of your recipe box!

Serves 4-6

1 yellow pepper, small diced
1 red pepper, small diced
1/4 cup of finely grated parmesan cheese
2 Tablespoons fine dry breadcrumbs
2 Tablespoons capers
3 Tablespoons olive oil
1 1/2 lb. piece of salmon
Salt and pepper

Preheat oven to 400 degrees.

Add diced peppers, parmesan cheese, bread crumbs, capers, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon fresh ground pepper into a bowl. Mix to combine.

Grease a baking dish that fits the salmon with oil. Place the fish, skin side down in the dish. Season with salt and pepper. Top with pepper mixture.

Bake fish 20-25 minutes until fish is flaky and the peppers crunchy.
