Southwestern Egg Bake

Breakfast casseroles are great for feeding a full house, and this one is especially fun because you have the option of serving it breakfast taco style (breakfast tacos 🥹🤤), with tortillas and various toppings, or you can keep it simple and serve as is. It couldn’t be simpler- less than five ingredients, no advance prep needed, just whisk everything together, bake and you are ready to go.

12 eggs
1 cup sour cream
1/2 cup salsa verde
2 cups shredded Monterrey Jack cheese (divided)
2 tsp salt
1/2 tsp white pepper

Optional toppings: scallions, sliced avocado, chopped cilantro, soft tortillas, Mexican hot sauce.

Preheat oven to 350 degrees and spray a 9x13 baking dish with oil.

Whisk together the eggs and sour cream until completely incorporated. Add salsa verde, one cup of shredded cheese, salt and white pepper and mix together.

Pour egg mixture into prepared baking dish, bake 40 min. Add remaining cup of cheese on top and bake an additional 15 minutes until eggs are set in the center.

Serve alone or with tortillas and toppings to make breakfast tacos!
