Strawberry Farro Salad
STRAWBERRY FARRO SALAD 💫 The perfect summer salad. Make it for a meatless meal, bring it to a potluck, serve it at a BBQ. You will definitely want this in your summer rotation.
Serves 2 as main, 4-6 as a side
2 cups strawberries, sliced
1 cup cucumbers, diced
1 cup cooked farro, cooled
1/2 cup salted pistachios
1/2 cup crumbled feta
1/2 cup mint, chopped
5 oz arugula
For the dressing:
1/2 shallot, minced, about 1/4 cup
2 Tablespoons white wine vinegar
2 Tablespoons orange juice
1/2 teaspoon salt
1/2 shallot- 1/4 cup
1/4 cup olive oil
Combine the shallots, white wine vinegar and salt. Set aside to quickly pickle while you assemble the salad.
Cook farro according to package directions.
Combine strawberries, cucumbers, Farro, pistachios, feta, mint, and arugula in a large bowl.
Add orange juice to the shallot mixture. Slowly whisk in olive oil.
Toss salad with desired amount of dressing and enjoy.
