Watermelon & Goat Cheese Salad with Lemon Basil Vinaigrette

Watermelons are at their peak flavor in August. Find a heavy one- that’s how you know it’s juicy! Nature’s candy! Cube some and make this amazingly delicious and refreshing salad. I especially love serving this one with some grilled steak and red onions. And don’t forget to juice any leftover watermelon and freeze in ice cube trays for future margaritas :)

4 cups watermelon, cubed into 1/2 inch pieces
1/2 cup sliced cucumbers
2-3 ounces goat cheese (crumbled)
1/3 cup pistachios
1 tablespoon lemon zest
2 tablespoons sliced basil leaves
1/4 cup olive oil
2 tablespoons red wine vinegar
Maldon flaky sea salt @maldonsalt
Freshly cracked black pepper

Place cubed watermelon and cucumber slices onto a platter or in a bowl.

Whisk together the oil, vinegar, lemon zest. Drizzle onto the salad and lightly toss. Top off with the goat cheese, basil, pistachios, flaky salt and pepper 💫
