Whipped Goat Cheese & Fig Toasts

Figs always feel like such a luxury because they are only ripe for a short period of time. Well, now it’s that time and this is the perfect way to start any August dinner. We love a toast for all seasons, and this is the perfect August breakfast toast - you might even want to have it as your breakfast toast the next day!
Makes about 20 toasts

1 baguette, cut into 1/2 inch slices
10 oz goat cheese, room temperature
2 Tablespoons honey
2 teaspoons olive oil
1 pint figs, thinly sliced (about 1/4”)
Balsamic Glaze
Flaky salt
Fresh ground pepper

Preheat oven to 350 degrees. Lay out baguette slices on a baking sheet and toast for about five minutes. You want the bread to still be slightly chewy, and not too crispy.

Whip together the goat cheese, honey, olive oil, a pinch of salt and a few grinds of fresh pepper. You can use a whisk, fork, or if you want it really fluffy you can get out your hand mixer. Taste and season as desired.

Spread goat cheese on toast, top with the thinly sliced figs and then drizzle with balsamic glaze. Sprinkle with a little flaky salt and black pepper to finish.
