Feta & Sun-Dried Tomato Dip

FETA + SUN-DRIED TOMATO DIP 💫

Ooooooh this dip is GOOD! Simple to whiz up in your food processor. The addition of fresh basil makes it feel like late-summer perfection and it pairs wonderfully with the rest of this Mediterranean-inspired menu. We’ve already made this magic dip many times!

2 cups crumbled feta

1 teaspoon minced garlic

1.5 tablespoons capers, rinsed

1/2 cup chopped sun-dried tomatoes

5 tablespoons olive oil

1/2 cup plain Greek yogurt

1-2 tablespoons chopped basil

Squeeze of half a lemon (about a tablespoon)

In a food processor combine the feta, garlic, capers, sun-dried tomatoes and olive oil and blend until smooth - if too thick, add a little more olive oil. Add yogurt and basil and pulse a few times. Add lemon juice and pulse again until combined.

Top with chopped sun-dried tomatoes and serve with crackers, pita, veggies!
