Mediterranean Chicken Kabobs
It’s official- kebabs are the easiest thing to make when guests come over- especially if you are hosting a large group or families with kids, because everyone will eat them! This Mediterranean inspired marinade is so flavorful and the touch of honey makes sure they grill up with all those crispy bits! We love serving this with our roasted red pepper and walnut dip, and it was a part of our Mediterranean lunch table! Make sure to save this because you will go back to this one again and again!
1 lemon, zested
1/4 cup freshly squeezed lemon juice
1 teaspoon garlic powder
1 tablespoon dried oregano
½ teaspoon dried thyme
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1 Tablespoon honey
1/3 cup extra virgin olive oil
3 lbs boneless skinless chicken breasts
In a large glass container, whisk together the lemon zest, lemon juice, garlic powder, oregano, thyme, kosher salt, freshly ground black pepper and honey. Once combined, slowly whisk in the extra-virgin olive oil.
Cut chicken breasts into 1 inch cubes. Place in glass container and massage the marinade into the chicken breasts. Let marinade at room temperature for 20 minutes or place the container in the refrigerator to marinate for up to 48 hours.
When ready to cook, preheat the grill to medium heat.
Thread chicken cubes onto kebab sticks. If using wooden ones, make sure they have soaked in water for at least 30 minutes. Place chicken skewers perpendicular to the grill grates and grill for 20 minutes, turning every five minutes until the internal temperature is 165°.
Remove from the grill, then carefully remove from the skewers. Serve warm or at room temperature!
