Kofte Meatballs with Tahini Yogurt Dipping Sauce
KOFTE MEATBALLS with TAHINI YOGURT DIPPING SAUCE💫 We all need another meatball recipe to add to our rotation. These Kofa inspired meatballs are so flavorful and delicious and super easy to make. with only a few ingredients, you can get these on the table for dinner! The yogurt sauce is so light and airy- perfect served aside the meatballs with some cucumbers, tomatoes and pita or our Mediterranean couscous salad 💫
½ cup pine nuts
½ cup lightly packed fresh flat-leaf parsley
1 large shallot, roughly chopped
2 teaspoons ground cumin
½ teaspoon ground allspice
Kosher salt and ground black pepper
1 tablespoons extra-virgin olive oil
1 pound 80 percent lean ground beef
1 egg
1/2 cup panko breadcrumbs
Preheat oven to 425 degrees
In a mini food processor, process the pine nuts, parsley, shallot, cumin, allspice, 2 teaspoons salt, 1 teaspoon pepper and 1 tablespoon of the oil until coarsely ground, about 30 seconds.
Add beef to a large bowl and add pine nut mixture, panko and egg. Combine very well with hands (I like to use plastic gloves while doing so).
Roll out meatballs with a medium cookie scoop. Bake 12 minutes.
For the dipping sauce:
1/2 cup Greek yogurt
1/4 cup tahini
1/4 cup ice water
1 garlic clove
2 tablespoons lemon juice
1 teaspoon kosher salt
Allepo Pepper for garnish
Combine all ingredients in a small food processor or blend with an immersian blender. Spoon into a bowl and top with a sprinkling of Aleppo pepper. Enjoy!
