Molten Lava Cake
Jean George made this dessert super popular in the 80’s and it still lives on for a reason! The batter only takes a few minutes to put together and you can slide the cakes into the oven after your date night dinner at home. The heart shaped ramekins are the perfect Valentines touch❣️💫
Serves 2
2 oz unsalted butter
3 oz of bittersweet chocolate
1 egg, at room temperature
1 egg yoke, at room temperature
1/2 teaspoon vanilla
1/4 cup sugar
Pinch of salt
1 Tablespoon of flour
Preheat the oven to to 400 degrees
Microwave the chocolate and butter in 30 second intervals until melted. Whisk until smooth. Add the egg and egg yoke and whisk until smooth. Add vanilla and sugar and whisk again. Add the salt and flour with one last whisk until incorporated.
Divide batter into two greased ramekins and bake for 13 minutes if using a 6 oz ramekin, 11 minutes if using an 8 oz ramekin. Remove from oven and let sit in ramekin for one minute. Invert the ramekin onto a plate and let it rest in the ramekin, inverted, for another minute. Lift off ramekin and sprinkle with powdered sugar, or serve with ice cream. Heart shaped strawberries on the side make a perfect Valentine’s garnish ❣️
