Pumpkin Bread

We love this pumpkin bread for many reasons…but whipping it up in just ONE bowl might be our favorite! This is the base of our Pumpkin Bread Pudding…if you can resist not eating it all straight out of the oven.

1 stick butter, melted
1 2/3 cup sugar
1 15 oz can pumpkin purée
3 eggs
1 teaspoon vanilla extract
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground clove
2 1/4 cups flour

Preheat oven to 350 degrees.

Whisk together the butter, sugar, pumpkin, eggs and vanilla in a large bowl. Sprinkle the baking powder, baking soda, salt, cinnamon, ginger, nutmeg, clove and flour on top of the wet ingredients and stir until fully combined. Pour into a greased large loaf pan (9x5, 6 cup pan) and bake for 70 - 80 minutes or until a toothpick comes out clean.
