Snap Pea Fizz

To celebrate the First Day of Spring 🌷 , we bring you…springtime in a glass! I sampled a Snap Pea cocktail last April at a a local favorite, @graybarns, and immediately texted Alst, “We have to try this!” This unusual cocktail menu find was a surprisingly refreshing delight. We have been thinking about this drink all year and have re-created a sweet and earthy version we think you will love. And while simple syrups can seem complicated, they are anything but! So try it!

1.5 ounces Gin (we like the botanical flair of the Gray Whale)
1/2 ounce snap pea simple syrup
2 ounces freshly squeezed lemon juice
Top with Prosecco, champagne, tonic or soda

Snap Pea Simple Syrup:
Blend 1 cup snap peas with 8 ounces water in a blender until throughly blended. Using a fine mesh strainer, strain into a glass measuring cup. Discard the solids. Pour into a small saucepan and add an equal amount of sugar. Heat over low heat, stirring until sugar is completely dissolved. Remove from heat to cool. Store in a bottle or jar in refrigerator for up to 3 days.

Cocktail:
Combine gin, lemon juice, and simple syrup into a glass filled with ice. Give it a stir. Top with bubbly. Garnish with lemon peel or a slivered pea. Enjoy đź’«
