Southside Fizz

A Southside is equal parts Mojito and Tom Collins πŸŒΏπŸ‹We made it the ultimate refreshing summer cocktail by creating a fizz version because, well, summer is for big cocktail glasses. We are all thirsty and it sure is hot... If you want to mix up your standard margarita order, this is the cocktail for you! #habituallycocktailing

Makes 1 cocktail

2 ounces vodka or gin (we used vodka)
1 ounce lime juice
3/4 ounce simple syrup
5 mint leaves, plus a sprig for garnishing
Sparkling water

To make the simple syrup combine 1/4 cup sugar with 1/4 cup water in a small sauce pan and bring to a simmer. Turn heat down to low and whisk until sugar is dissolved. You can make any amount, just use equal parts sugar and water. Keep leftover simple syrup on hand in the fridge.

Fill a cocktail shaker with ice and add gin or vodka, lime juice, simple syrup and mint. Shake well. Fill a highball or fizz glass with ice. Pour shaken cocktail over ice. Top with sparkling water and garnish with a mint sprig and lime wedge.
