Black Bean and Mango Salsa

This dip is the perfect accompaniment to your margarita. It’s also fabulous served with grilled chicken or salmon, and comes together in about 10 minutes. This recipe makes A LOT! But can easily be cut in half...

4 limes, juiced
1/4 cup olive oil
1 teaspoon coriander
1 tablespoon salt
2 teaspoon cumin
1 avocado, diced
2 cans of black beans, drained and rinsed
2 mangoes, diced
1/2 cup of minced red onion
1 red pepper, small diced
1/2 yellow pepper, small diced
1/4 cup jalapeno, seeded, membranes removed, and minced

Place diced avocado in a large bowl and coat with lime juice. Whisk together olive oil, cumin, coriander and salt in a small bowl. Add black beans, mango, red onions and peppers and olive oil mixture and toss to combine. Serve with tortilla chips 💫

*If you want to make in advance, omit the avocado and add right before serving.
