Strawberry Shortcake Chia Seed Pudding

Who likes strawberry shortcake?? That is what this healthy and filling chia seed pudding tastes like! A strawberry dream 🍓 Preparation takes all but ten minutes and you’ve got a grab-n-go breakfast ready for you in the fridge!

1/2 cup milk of your choice (coconut milk works great)
1/3 cup coconut yogurt or yogurt of your choice
1 cup chopped strawberries (fresh or frozen)
1/3 cup shredded unsweetened coconut
1-2 tablespoons maple syrup (depending on desired sweetness)
1 teaspoon vanilla
5 tablespoons chia seeds

Throw all ingredients (except seeds) into a blender-whirl it up! Should have 1-1.5 cups once blended. Add 5 tablespoons of chia seeds. Mix. Evenly distribute between 2-3 containers/jars with airtight lids. Leave overnight. Ready to enjoy for breakfast in the morning!
