Egg-xtra Protein Egg Bite

Protein, protein, protein! We’re always being told we need more!
Well, here is an “un-egg-spected”way to add a bit more of the stuff we need to the already perfect protein of an egg.
I wasn’t always a huge fan of cottage cheese-but after seeing all the ways you can jazz it up…I decided to try something new. This little cottage cheese bite easily and deliciously packs in a lot of protein. Just top with a some seasoning or spices, avocado for some healthy fats, micro greens for well…greens.

Then, put an egg on it!

Voila! A healthy and fulfilling breakfast, snack, lunch! Comment EGG and we will send you the link to the egg rings we used.

For ONE bite:

Preheat oven to 400 degrees.

Line a sheet pan with parchment paper. If you have the egg discs, butter/grease the inside ring and place on parchment. If you don’t, you can still spoon a little round onto the paper, it will just spread a bit.

Fill ring with as much full-fat cottage cheese as will fit into disc - about 3 ounces.
Top with a sprinkling of Parmesan or cheese of choice and a sprinkling of Everything But The Bagel seasoning.
Bake for about 30-40 minutes till starting to brown on top.

Carefully remove disc-will be hot! Plate and top with an egg cooked to your liking (we chose a fried egg) and top with any other desired toppings!
